PIE CRUST INGREDIENTS
- 2 cups all purpose flour sifted
- 1 teaspoon salt
- 2⁄3 cup butter
- 5 -7 tablespoons cold water
- Put flour into a mixing bowl with the butter.
- Using a pastry cutter, cut the butter into the flour.
- add salt and water.
- Mix until dough is formed.
- Roll out on flat surface.
- Bake at 375 degrees until brown.
- Prick crust prior to baking for non filled baked pie.
SWISS CHARD FILLING
One bunch of Swiss Chard, washed
1 egg
4 oz cream
2 oz cheddar cheese
4 slice of bacon diced
Preheat oven to 350
Remove stems from the leafs
Cut stems about a 1/4 inch in length
Roughly chop the greens.
In large saute pan, heat on medium heat
Render the bacon 5-8 minutes
Drain off fat.
Next add stems to pan and cook until tender.
Add chopped greens, turn off heat and cover to wilt greens.
Let cool, draining off excess liquid.
In a mixing bowl add cream and egg, mix well.
Next add Swiss Chard, bacon, cheddar cheese salt and pepper to taste and mix well.
Add Swiss Chard mixture to baked pie crust.
Bake 20-25 minutes.
Let cool 10 minutes and slice.
