Kyle Park's Blackberry Cobbler recipe was prepared by Amy Kushnir on News 8 Daybreak Saturday, June 18 2011.


  • 1 1/2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 1/2 tps. baking powder
  • 1/2 tsp. salt
  • 1 tsp. cinnamon
  • 9 Tbs. cold butter
  • 1/3 cup boiling water


  • 2 Tbs. corn starch
  • 1/4 cup cold water
  • 1 Tbs. lemon juice
  • 4 cups fresh blackberries
  • 1/2 cup sugar


  1. Preheat oven to 400 degrees.
  2. Mix flour, sugar, baking powder, salt, and cinnamon in a large mixing bowl.
  3. Cut in the butter until you have a coarse, crumbly mixture.
  4. Add the boiling water and stir together well so that all of the dough is wet. Set aside.
  5. Dissolve the cornstarch in the cold water in a medium bowl.
  6. Add the lemon juice, berries, and sugar. Mix together well.
  7. Pour berries into a 9 to 11-inch cast iron skillet (if you don't have a cast iron skillet, you can bake this in a 9x9-inch baking dish).
  8. Heat mixture over medium heat stirring frequently - mixture will thicken.
  9. Remove from heat.
  10. Drop spoonfuls of dough over the berry mixture spreading entirely over the top of the berries.
  11. Put the cast iron skillet on a foil-lined cookie sheet and place in the oven. Bake for 20-25 minutes, until the dough is golden brown and the berries are thick and bubbly.
  12. Let cool completely and serve with vanilla ice cream....mmmmm!
