Pancakes are on the Daybreak menu this morning. No need for store-bought mixes when you have all the ingredients you need in your pantry. Pancakes are a quick meal to serve and this recipe is a time saver that will allow you to make extras and freeze them for a quick meal on the go. With so manyflavors ofpancakes to choose from, it's hard to pick a favorite. Today I shared a basic pancake recipe that you can eat them plain or add whatever you like, even bacon.


  • 1 1/2 cups flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 stick melted butter
  • 2 eggs
  • Dash of vanilla


  • Whisk/mixdry ingredients together in a medium sized bowl.
  • Whisktogether wet ingredients,then whisk into the flour mixture until just combined. Ladle 1/4 cupfuls onto a hot buttered skillet and cook until bubbly.
  • Flip and cook until golden on the bottom.

*Use this basic pancake recipe for making blueberry or chocolate chip pancakes using same process as above. Sprinkle with blueberries, bananasor chocolate chipsbefore flipping.

You can put pancakes in a warm oven on a foil-lined baking sheet until ready to serve.
