Amy Kushnir of My Texas Today prepared Banana Nut Bread on News 8 Daybreak Saturday, September 14.


INGREDIENTS

  1. 2 large eggs
  2. ⅔ cup buttermilk
  3. 1 stick butter, softened
  4. 21/2 cups sifted flour
  5. 11/4 tsp. baking powder
  6. 11/4 tsp. baking soda
  7. 1 tsp. salt
  8. 1⅔ cup sugar
  9. ⅔ cup chopped pecans
  10. 11/4 cup mashed bananas

DIRECTIONS

  1. In a mixer, beat together eggs, butter, buttermilk.
  2. Add in flour, baking powder, baking soda, salt and sugar. Mix on medium until thoroughly blended.
  3. Fold in pecans and bananas on low speed.
  4. Pour batter into two greased bread loaf pans, filling about halfway.
  5. Bake at 350 degrees for 40-50 minutes until cooked through.
  6. Slice once cooled.
