Victor’s Mac & Cheese

Ingredients

  • 1 12 oz pkg. small elbow macaroni
  • 1 Tbsp. vegetable oil
  • 1 Tbsp. salt
  • 4 Tbsp. butter
  • 3 Tbsp. flour
  • 1 small can evaporated milk
  • 2¼ cups milk
  • ½ green bell pepper diced fine
  • 2-3 Tbs. onion, diced fine
  • 1 lb. Velveeta cheese cubed ( Plain or Mexican Flavored)
  • salt/pepper to taste

Directions

  1. Cook macaroni in water, oil and salt. Drain and set aside.
  2. Melt butter in saucepan, add flour and whisk together.
  3. Add all milk and cook for 10 minutes, stirring constantly.
  4. Add cheese, salt and pepper and cook until cheese has melted.
  5. Add bell pepper and onion.
  6. Mix macaroni with sauce, pour into casserole dish and bake until thoroughly heated @ 325 degrees for 20-25 minutes

Festive Sweet Potato Casserole

Ingredients

  •  40 oz. can yams/sweet potatoes in syrup (or 3 cups cooked), mashed
  • 1/2 cup sugar
  • 1/4 cup milk
  • 1/3 cup butter, melted
  • 1 tsp. vanilla extract
  • 2 eggs, beaten

Topping

  • 1 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 1/3 cup butter, melted
  • 1 cup chopped pecans
  • 1 cup flaked coconut (optional)

Directions

  1. Pre-heat oven to 375 degrees.
  2. Combine first 6 ingredients in a large mixing bowl, mixing well.
  3. Lightly grease 8" x 8" square baking dish. Spoon mixture into prepared baking dish.
  4. Combine topping ingredients in a medium mixing bowl, sprinkle over top of sweet potato mixture.
  5. Bake for 20 - 25 min. or until golden brown.

Yields 6 servings
