Victor’s Mac & Cheese
Ingredients
- 1 12 oz pkg. small elbow macaroni
- 1 Tbsp. vegetable oil
- 1 Tbsp. salt
- 4 Tbsp. butter
- 3 Tbsp. flour
- 1 small can evaporated milk
- 2¼ cups milk
- ½ green bell pepper diced fine
- 2-3 Tbs. onion, diced fine
- 1 lb. Velveeta cheese cubed ( Plain or Mexican Flavored)
- salt/pepper to taste
Directions
- Cook macaroni in water, oil and salt. Drain and set aside.
- Melt butter in saucepan, add flour and whisk together.
- Add all milk and cook for 10 minutes, stirring constantly.
- Add cheese, salt and pepper and cook until cheese has melted.
- Add bell pepper and onion.
- Mix macaroni with sauce, pour into casserole dish and bake until thoroughly heated @ 325 degrees for 20-25 minutes
Festive Sweet Potato Casserole
Ingredients
- 40 oz. can yams/sweet potatoes in syrup (or 3 cups cooked), mashed
- 1/2 cup sugar
- 1/4 cup milk
- 1/3 cup butter, melted
- 1 tsp. vanilla extract
- 2 eggs, beaten
Topping
- 1 cup packed brown sugar
- 1/3 cup all-purpose flour
- 1/3 cup butter, melted
- 1 cup chopped pecans
- 1 cup flaked coconut (optional)
Directions
- Pre-heat oven to 375 degrees.
- Combine first 6 ingredients in a large mixing bowl, mixing well.
- Lightly grease 8" x 8" square baking dish. Spoon mixture into prepared baking dish.
- Combine topping ingredients in a medium mixing bowl, sprinkle over top of sweet potato mixture.
- Bake for 20 - 25 min. or until golden brown.
