Mexican Chicken

Ingredients

  • 4 large boneless, skinless chicken breasts
  • 2 8 oz. cans Rotel Sauce (not original)
  • 1 4 oz. can Hatch green chiles (chopped)
  • 1 14.5 oz. can Hunt’s Fire Roasted Garlic Tomatoes
  • 1 - 2 Tbs. taco seasoning (any brand)
  • 1 lime - juice squeezed
  • 1/2 cup chopped onion

Directions

  1. Heat oven to 350 degrees
  2. Layer chicken first, then all remaining ingredients into a deep baking dish with lid
  3. Cover and bake for 2 hours
  4. Serve with soft tortillas or crunchy taco shells
