Daybreak recipe: Strawberry Cake

Amy Kushnir of My Texas Today prepared Strawberry Cake on News 8 Daybreak Saturday, May 18.


INGREDIENTS

  • 1 box yellow cake mix, (I prefer Pillsbury)
  • 1 3 oz. box Raspberry Jell-O
  • 1/2 cup strawberries, finely chopped
  • 1/2 cup water
  • 4 eggs, whisked
  • 3/4 cup vegetable oil
  • 3 Tbs. flour

For Icing:

  • 1/2 stick butter, softened
  • 1 8 oz. pkg. cream cheese, softened
  • 1 & 1/2 cup powdered sugar
  • 1/2 cup strawberries, finely chopped
  • 1 Tbs. milk

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In a mixer, mix all ingredients together on medium-high speed until well blended.
  3. Pour batter into a greased and floured bundt pan and bake for 40-45 minutes.
  4. Once done, set on a cake on a cooling rack and completely cool (about an hour).
  5. Flip cake over to a serving plate and carefully lift bundt pan off.
  6. Evenly distribute icing all over and serve.

For Icing:

  • Mix all ingredients together in a mixer on medium-high speed until well blended; add more milk to thin.

Refrigerate any leftovers
