Daybreak recipe: Pancakes

Pancakes are on the Daybreak menu this morning. No need for store-bought mixes when you have all the ingredients you need in your pantry. Pancakes are a quick meal to serve and this recipe is a time saver that will allow you to make extras and freeze them for a quick meal on the go. With so many flavors of pancakes to choose from, it's hard to pick a favorite. Today I shared a basic pancake recipe that you can eat them plain or add whatever you like, even bacon.
 

Ingredients:
 
  • 1 1/2 cups flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cups milk
  • 1/2 stick melted butter
  • 2 eggs
  • Dash of vanilla
Method:
 
  • Whisk/mix dry ingredients together in a medium sized bowl.
  • Whisk together wet ingredients, then whisk into the flour mixture until just combined. Ladle 1/4 cupfuls onto a hot buttered skillet and cook until bubbly.
  • Flip and cook until golden on the bottom.
*Use this basic pancake recipe for making blueberry or chocolate chip pancakes using same process as above. Sprinkle with blueberries, bananas or chocolate chips before flipping.
 
You can put pancakes in a warm oven on a foil-lined baking sheet until ready to serve.
