HOLIDAY RECIPE: Alexa Conomos' Mama Conomos' Chocolate Truffles

1 6-ounce package of semi-sweet chocolate bits
1 1/3 sticks butter
2 scant cups sifted powdered sugar
1 tsp. BREWED coffee (I sometimes use regular coffee but make it strong)
1 tablespoon rum
1 egg yolk
Chocolate wafer cookie crumbs (Buy the brand “Famous Chocolate Wafers”—you may have to find them at a “Central Market” type store if there not at your local grocery store)
 
 
Melt and cool chocolate bits.
Cream butter and sugar and add egg yolk. Mix well.
Add coffee and rum. Then add cooked chocolate.
Refrigerate mix until firm enough to roll into 1-inch balls.
Grind some chocolate wafers in a mixer—you want them to be like fine crumbs
Take mix out of fridge. Roll a spoonful into a ball.
Roll ball in chocolate wafer crumbs.
Keep in refrigerator or freeze.
 
**Note: Lightly put the chocolate wafer crumbs on your hands and then roll the chocolate mixture. This will help the mixture not stick to your hands. You can finely crumb the wafers with a blender. You can serve these at room temp, refrigerated—even frozen. You can also make these well ahead of a special event—they freeze well—just make sure you wrap them well in saran wrap so they don’t get freezer burn. They go great with coffee, port, anything!
