HOLIDAY RECIPE: Rebecca Lopez's Sweet Potato Souffle

1 (28 oz) can of yams (although I like to use 28 ounces of real yams---heat them in microwave until they are soft-then mash them)
1 cup sugar
1/2 cup milk
2 eggs
1 tsp. vanilla
1/2 tsp. salt
1/2 stick butter

Mash yams with a fork. Combine all the above ingredients and put in a greased 2-qt. casserole.


Topping:

1 cup brown sugar
1/2 cup butter
1 cup chopped pecans
1/2 cup flour

Soften butter.  Mix all ingredients and sprinkle over sweet potato mixture.  Bake at 2
350 degrees for one hour.

This recipe is a huge hit at all our Holiday gatherings.
