HOLIDAY RECIPE: Wendy Corona's Sweet Potato Casserole

This is my favorite casserole -- made by my sister Michelle Semas

Ingredients:


3.5 lbs of sweet potato chunks
1/3 cup of honey
1 egg
1 tsp ground cinnamon
1/4 tsp ground nutmeg
1/8 tsp ground ginger
1/2 tsp Kosher salt
1 Tbsp brown sugar
1/3 cup chopped pecans


Preheat oven to 350.
Mist an 8" square baking dish w/cooking spray.
Steam the potatoes.  After, let them cool in a dish & remove the skin.
Add honey, egg, 1/2 tsp cinnamon, nutmeg, ginger and 1/2 tsp salt to potatoes.
Whip until smooth with an electric mixer.  Spread mixture in a dish.
Mix brown sugar, pecans and 1/2 tsp of cinnamon in a bowl, then sprinkle over potatoes.
Bake until hot & starts to brown around the edges... about 40-45 minutes.
