CHORIZO, GOAT CHEESE AND ROAST RED PEPPER FRITATTA
 
INGREDIENTS:
3 EGGS
4OZ. RAW FRESH CHORIZO
1 OZ PAULA’S GOAT CHEESE
2 TBS DICED ROASTED RED PEPPER
1 TSP UNSALTED BUTTER
SALT AND PEPPER TO TASTE
 
METHOD:
PLACE EGGS IN BOWL AND WHIP BRISKLY
PLACE CHORIZO IN NON STICK 6” SAUTE PAN AND COOK OVER MEDIUM HEAT UNTIL RENDERED
STRAIN AND PLACE BACK IN PAN
ADD ROASTED RED PEPPERS AND SAUTE FOR 1 MIN
ADD EGGS AND BUTTER
SEASON WITH SALT AND PEPPER
STIR TO BUILD SOFT CURDS OVER LOW FLAME
ADD GOAT CHEESE
PLACE INTO PREHEATED 325 DEGREE OVEN FOR 3 MINUTES
REMOVE AND CHECK FOR DONENESS.
