Cajun Injector Creole Butter Roast Duck
 
 
Prep time: 10 minutes
Cook time: 2 hours
Serves: 4
 
Ingredients
1 (5 pound) whole duck
1 to 1.5 oz per pound Cajun Injector® Creole Butter OR Creole Garlic marinade
4 teaspoons Cajun Injector® Cajun Shake (or to taste)
1/2 cup melted butter
 
Directions
Preheat oven to 375 degrees F (190 degrees C).
Rub Cajun Shake into the skin of the duck.
Inject Cajun Injector Creole Butter or Creole Garlic marinade into duck breast, thighs and legs at a rate of 1 or 1.5 ounces per pound. (A 5-pound duck will take a maximum of 7.5 ounces of marinade, or half of a 16-ounce jar of Cajun Injector brand marinade.) **NOTE: Cajun Injector is the original SLOW-COOKED injectable marinade specifically formulated to permeate meat with Creole flavor. Uncooked marinades simply pocket spices in one area.**
Place in a roasting pan and roast duck in preheated oven for 1 hour.
Pour and baste 1/4 cup melted butter over bird, and continue cooking for 45 more minutes. Baste remaining 1/4 cup melted butter over duck, and cook for 15 more minutes, or until golden brown.
