4 Chicken breasts, split
2 teaspoons lemon juice
salt and pepper, to taste
2 teaspoons oregano
1/2 cup flour
1/4 cup olive oil
1/4 cup Marsala wine
1 cup fresh or canned mushrooms, cut up
1.) Wash and dry chicken breasts, then rub in lemon juice and season with salt, pepper and oregano.
2.) Coat lightly with flour and let stand for 15 minutes. Then in a large frying pan add oil and butter until hot and saute chicken. Add wine, mushrooms and simmer for 20-30 minutes, until tender.
