(makes 2 sandwiches)
8 oz. grilled or baked chicken breast, cut thin or in strips for sandwich
4 roasted bell peppers
4 slices sourdough bread
Place chicken, roasted bell peppers, basil and boursin on buttered sourdough bread and place on griddle/panini press.
If you do not have a press, use a foil covered brick or heavy pan to press the sandwich. Grill on both sides and serve warm.
