(serves 4)
1 lb chicken breast marinated in Huli glaze (recipe below)
1 lb beef skirt steak marinated in Jamaican marinade (recipe below)
1 lb shrimp seasoned with lemon pepper and olive oil
Soak wooden skewers in water for an hour before using. Skewer items individually after marinating and grill on both sides until cooked and serve on a bed of roasted veggies and rice.
Huli Glaze
1/2 cup soy sauce
1/2 cup ketchup
1/2 cup brown sugar
1 1/2 cup pineapple juice
1/3 cup sake or mirin (rice wine)
2 tsp. ginger
1/2 cup onion or scallion, minced
1 tsp. garlic, minced
Fresh ground black pepper to season
Salt to season
Jamaican Marinade
1 habanero chili, seeded and chopped
10 green onions, chopped
1/2 cup chopped onion
4 cloves garlic, chopped
1 3-inch piece ginger, peeled and chopped
1/4 cup whole allspice
4 bay leaves, crushed
1/3 cup fresh thyme
1 teaspoon freshly-ground nutmeg
1 teaspoon freshly-ground cinnamon
1 teaspoon sea salt (to taste)
1 tablespoon freshly-ground black pepper
1/4 cup olive oil
1/4 cup soy sauce
1/4 cup white vinegar
1/4 cup lime juice.
1/2 cup orange juice
