Blue Cheese Grits (yields 4 cups)
Ingredient

garlic chopped

shallots chopped

chicken stock

cream

blue cheese

cups
Parmesan

cups
grits 
2
cups
METHOD: 
1. In a small pot sweat garlic and shallots 
2. add chicken stock and bring to a boil
3. add grits and cook until proper consistency
4. add cream and fold in until well incorporated
5. fold in blue cheese and Parmesan
6. season with salt and pepper

Shrimp and Grits:
Ingredient

Shrimp
Grits 
Worcestershire BBQ
Garnish

Assembly
  1. In a hot saute pan sear off shrimp with oil and butter
  2. place grits on the bottom of the plate
  3. place shrimp on top of the grits
  4. place sauce on top and around the shrimp
  5. garnish with micro greens
