Jack & Coke Glaze Recipe
6-Pack of Coke
½ Bottle Jack Daniels
1 Medium Yellow Onion (diced small)
4 Medium Sized Shallots (diced small)
½ Stick of Butter
1/2 Cup of Chicken Stock
1 Bunch of Fresh Thyme (chopped)
In a medium sauce pan reduce the 6-pack of coke to a syrup (reduce by boiling to a little over half the original amount). In another medium sauce pan reduce the Jack Daniels by half (reduce by boiling to half of the original amount). Be careful while burning off the alcohol so it doesn't flame up. Set both aside.
In another sauce pan melt your butter on high heat, and add your onions and shallots. Continue to cook on high heat until it's caramelized. Add your chicken stock and let it reduce until most of it is evaporated. Then, add your coke and Jack reduction to the onion/shallot mixture. Continue to simmer on medium heat for about 10 to 15 more minutes (you want a syrup consistency). Finally, remove from the heat, and add your fresh chopped thyme and serve.
