Ben Spies' Sweet and Salty Acorn Squash

Ingredients:
2 heavy acorn squash
Whole Foods 360 Turkey bacon
1 large purple onion
1 cup brown sugar
Sea salt
Pepper
4 Tbsp Unsalted butter
EVOO
 
Wrap squash in foil and bake 30 minutes at 350 degrees
Meanwhile, dice whole onion and toss in EVOO, salt and pepper to taste (cook until slightly soft).  Set aside.
Fry 12 strips of turkey bacon until crisp.  Set on paper towels and blot away grease.
Chop cooked bacon into thick crumble. Set aside.
Remove squash from oven and allow to cool 5 min.
Using oven mitts to handle hot squash, cut both into halves.  Scoop out meat of the squash and mash into medium bowl.  Set empty halves aside.
Fold in butter, bacon and onions.  Salt and pepper to taste.
Scoop mixture back into empty halves.
Heavily sprinkle with brown sugar over the top and return to oven.  Bake for 5 min or until sugar melts.
Remove and allow to cool for 5-10 min before serving.
