Recipe for Dirty Rice:
1 lb. fresh ground pork
1 red bell pepper diced
1 green bell pepper diced
1 med yellow onion diced
1 piece celery diced
1 oz green onion
1 clove fresh chopped garlic
1/2 oz dried italian herbs
1/2 oz fresh parlsey(optional)
1/2 oz red pepper(if you like heat)
1 bay leaf
1 oz Tony's creole spice
1 oz Season salt
2 quarts chicken broth(fresh or canned)
1 quart Uncle Bens long grain converted white rice(for best results)
Directions: Brown ground pork over med/high heat half way to release some of its oils, add bell peppers, onions, celery, and green onion. Cook about two minutes until pork is almost completely browned. Add Garlic, parsley, dried herbs, red pepper, bay leaf and spices.
Cook about one more minute and add chicken broth. Bring Chicken broth to a boil and simmer about two minutes to release flavors from herbs and spices. Add Rice, bring back to a boil....stir once and cover. Lower heat on stove to med and let cook for exactly 20 minutes. Turn off heat, let sit for five minutes and enjoy.
Note; Make sure you don't use minute rice and remember to cook rice its always 2 parts liquid to 1 part rice unless using brown or wild rice which I don't recommend for this dish.
